Poem: Springtime

Lady of Light

This week I will share a poem I wrote for the season of Spring. Although the calendar date for Spring has passed and there are daffodils and hyacinths blooming in my garden, I left home in a winter jacket this morning - in New Jersey, there is still a chill in the air. At any rate, let's celebrate the beginning of Spring with the following thoughts:

Springtime

The sun, a soft shining circle of
yellow light,
Emanating lengthy light rays,
Penetrating through me as I
walk along,
Praising God for Springtime days.

The blades of green grass,
Standing tall, soft and velvet,
Peeking through the ground.
Praise you, Holy God,
Spring is all around.

The beauteous buds, blooming
mysteriously from every tree,
Springtime, you are truly a gift from
Heaven, wrought by the hands of thee.

The silence is interrupted by the melody
of the birds in glorious song,
Springtime, I've waited for God to send you,
Through the winter, I waited so long.

Recipe - No-Meat Treat

Lady of Light

This week I want to share a recipe that is good as a snack or hors douvre or a side dish. Egg plant makes a wonderful meat substitute and these "Stuffed Eggplant Rolls" are healthy and yummy.

Stuffed Eggplant Rolls

1 cup grated mozzarella cheese
1/2 cup Parmesan cheese (grated)
1/3 cup ricotta (or cottage cheese)
1/2 teaspoon oregano
2 eggs
1 tbs. chopped parsley
2 tbs. whole wheat (or reg.) flour
1/2 tbs. baking powder
dash veg. salt (or reg.)
1/3 cup milk
5 tbs. olive oil (or reg.)
1 large eggplant

l. Combine cheeses with one egg yolk - save egg white
2. Add parsley and salt - blend well
3. Beat one egg white stiff - blend in
4. Chill mixture - 15 minutes
5. flour, baling powder, milk, remaining egg and 1 tbs. oil - beat well into batter
6. peel egg plant
7. Cut in half longways and slice longways 1/16" thick
8. Flour lightly - dip in batter mixture
9. Brown lightly in oil - drain
10. Place cheese on slices of eggplant and roll up
11. Place in oiled bake dish @ 375 degrees for 15 minutes
(can use tomato sauce in casserole or on the side if desired)

Poem for Easter and Always

It is the almost the dawn of Easter Sunday. I sit and meditate on Jesus - especially after watching a special on CNN last night. I am so thankful that I have the comfort of knowing that He is risen.

In Acts, Chapter 7:55-56, at the end of Stephen's famous speech the bible says,

"But he (Stephen) being full of the Holy Ghost, looked up steadfastly into heaven, and saw the glory of God, and Jesus standing on the right hand of God, and said "Behold, I see the heavens opened, and the Son of man standing on the right hand of God."

This is a wonderful account and witness of where Jesus is now. He reigns in power and glory at the right hand of the father.

The birth, death and resurrection of Jesus is the only thing that can truly change our lives. We can truly rejoice when we know that he rose again, above death and suffering.

This is a little poem I wrote which comes from the bible verse,
"Jesus Christ the same, yesterday, today and forever":

Jesus Is The Same

Jesus is always the same,
He watches over me and
Even knows my name!

He is the same yesterday and today,
He hears and answers prayers without delay,
I always know without a doubt,
When I call on the name of Jesus,
Help is on the way!

forever will he be the same,
Jesus, I praise your holy name,
You send your comfort from above,
That's how I experience your unchanging love!

Jesus Christ the same--yesterday, today, and FOREVER!

Easter Egg Recipe

Do you wonder what you are going to do with all of those Easter eggs? Or do you just want to make something colorful with Easter eggs? Here is a recipe that I found years ago and have had a lot of fun with:

Sue's Devilled Egg Garden

Ingredients: 12 hardboiled eggs
McCormick food coloring
Deviled Ham
Tuna fish salad (drained tuna with mayonaise)
Parsley sprigs
Leaf Lettuce
Mayonaise and Mustard

l. Peel eggs and cut in half, removing yolks into a bown
2. Mix salt, mayonnaise and mustard to taste with yolks (suggest 2/3 mayo to 1/3 mustard). Will be used to fill some of the egg haalves.)
3. Put pink, blue, yellow and green food coloring and water in individual cups.
(Large enough to cover egg whites.)
4. Put six halves of egg whites in each color; let them dry
5. FIll egg whites, some with tuna, some with egg yolk mixture, and some with deviled ham.
6. arrange lettuce on tray with parsley sprigs for "leaves" and put "flowers" (eggs) on tray.

This makes a beautiful addition to any table as a side dish or hors douvre.

From the East to the West

Lady of Light

Many of today's songs use the phrase "from the East down to the West". The song "I Shall Be Released" which I have heard sung by my favorite Bob Dylan uses this phrase. In Psalm 103, verse 12, God uses it in a particularly wonderful way:

"As far as the east is from the west, so far hath he removed our transgressions from us." Ps. 103:12

This is a very important thing to know about our God. He doesn't continue to hold on to or remember our sins when he forgives us, he removes our transgressions from us. So often we can think of mistakes we've made, sins we committed, and the enemy likes nothing better than to try to rob us of the love, joy and peace that God has given us. When I read Psalm 103, it tells me what God is like and how he doesn't come down on me the way I come down on myself sometimes. I thank God that he has removed my transgressions because this is something I could not do for myself but when I see what he has done, I can praise him and be thankful and be joyful once again.

I hope that as you get to know God, or continue to know God, you will remember this wonderful thing about him. It is a divine miracle that makes all the difference in the world how I feel about myself and my God when I meditate on this bible truth.

God;s Gifts of Hearing and Seeing

After recently having eye surgery, I am very aware of God's gift of vision - not only physical, but spiritual as well. In Proverbs 20:12, it tells us:
"The hearing ear, and the seeing eye, the Lord made even both of them." I am so grateful for these two gifts, both physical and spiritual.

When I see physically after the surgery, everything is bright and beautiful and I am so much more aware of little things. I walked outside yesterday and saw the first signs of spring. Our little garden in the front of the house has hyacinths and daffodils coming up from last year's planting. Yellow and pink - so beautiful. Then, I am hearing the music of spring - the birds singing what seems to be a sweeter song. A bit different than in the cold of winter.

Then there is the spiritual vision - God is constantly showing me new things from his word and in my life about how he put me here for a purpose - to worship and praise him, to encourage others and to enjoy the many blessings he has for me - one of His dear children. I thank God for His special vision and also for allowing me to hear the still small voice of His spirit resonate from within.

To see and to hear, we need to meditate on His word - in Psalm 19:14 it says a little prayer: "Let the words of my mouth, and the meditation of my heart, be acceptable in thy sight, O Lord, my strength and my redeemer."

So, as God strengthens and redeems us, we are able to think the thoughts that He has for us and become richer and stronger in faith.

St. Patrick's Day Special Recipe

Tomorrow is St. Patrick's Day. The wearing of the green!. I believe I will be sharing a traditional Irish meal of corned beef, cabbage and potatoes with a dear friend.
But another dear friend gave me a recipe years ago that her mother used to make and it is Irish too! Something a little different.

IRISH SPAGHETTI

1 Lb. thin spaghetti, cooked and drained
3 TBS. Parmesan Cheese
1 TBS. Worsteshire sauce
l TBS. butter
l TBS. flour
l-1/2 cups milk
4-8oz. grated cheddar cheese
Dash salt.
l. Cook spaghetti as directed and drain.
2. Layer in casserole dish with Parmesan cheese
3. Melt butter in sauce pan - add flour and salt to taste.
4. Gradually add milk and thicken
5. Add grated cheese and Worcestershire sauce]
6. Stir in with spaghetti in covered casserole
7. Bake 30 minutes at 350 = uncover for 5 minutes if crisp top is desired
8. Suggestion: Serve with scallops or fish

Have Confidence

In thinking about what is the most important factor in making decisions, handling relationships and also responsibilities I have come to the conclusion that it is having confidence in your thoughts, actions and behaviors. Where does this confidence come from if it is really real and valid? In Proverbs, Chapter 14:26-27 we find that we need to have "Fear of the Lord" which brings about confidence:

"In the fear of the Lord is strong confidence; and hs children shall have a place of refuge. The fear of the Lord is a fountain of life, to depart from the snares of death."

Many years ago, I had difficulty understanding "How can we love Jesus, have a close relationship with him and be afraid of him?" Those who were a bit more well schooled in the Greek and in bible knowledge explained that "fear" means "to have a healthy respect and a reverence for God". This basic attitude should be at the core of our relationship to him and will influence all that we think, say or do. When we have a reverence and a respect for God, we will be gifted with strong confidence, the bible tells us, and we will also have a place of refuge. This is two wonderful promises of God. When we have confidence, we can live out our faith not only in relationship to God but also in our relationships with others. We can be more assured that what we think and do will receive the blessing and the approval of God because we have the right heart attitude.

In a recent conversation, my husband and I were talking about all of the crazy things that are going on in the world - the instability of the political race for President - the things candidates are saying and doing and just last night, being affected by the resignation of Elliot Spitzer. While it is true that we don't have any control over much of this, we can trust God that he will guide our steps and that He is in control in spite of the follies of men. Therein lies our confidence and our place of refuge.

The fear of the Lord being described also as a fountain of life tells us that our heart attitude, not the circumstances of the world will be the determining factor in deciding our destiny and our quality of life. So often we forget that circumstances alone without the components of right heart and thinking do not guarantee anything in this life.

I want to keep reading and praying, and discovering more of the blessings and promises of God, because if I can think on those things, I know I will be healthier and happier, and more confident and effective in my daily walk.

What A Sight!

You may notice that I haven't written for a while. I had cataract surgery and was giving my eyes a rest. Oh, but everything is bright and beautiful! I even saw a red cardinal out my kitchen window the other day and the red was so red!

I am so grateful to God (and to my surgeon) that my vision is so much clearer. As I read in the book of Luke, I came across a section that is appropriate to the situation. Interestingly, too, Luke was a physician but these are words of Jesus because they are in red letters in Chapter 4:18:

"The Spirit of the Lord is upon me because he hath anointed me to preach the gospel to the poor; he hath sent me to heal the brokenhearted, to preach deliverance to the captives, and recovering of sight to the blind, to set at liberty them that are bruised. To preach the acceptable year of the Lord."

Well, we all certainly need to preach and hear the gospel message and anyone who has not heard it is poor regardless of their material state of money or possessions. All of us have at one time or another experienced brokenheartedness, and need to heal. Deliverance is a wonderful gift of God but restoring of the sight has a new and wonderful meaning to me after having eye surgery. The world is a much brighter place than I remembered it to be. I am now looking forward to spring, seeing the full color of all the flowers, going on a trip to the art gallery, and catching up on some reading too!

The interesting thing about this is that the eye sight got worse gradually and until the surgery, I didn't realize how bad it had been. Is it that way with our spiritual vision also? One day we skip reading the bible or our prayers are quick and hurried? We become distracted by the business of life or certain concerns- things that seem important to us but may not really be all that important in the bit scheme of things?

Suddenly, prayers are prayed and felt - the bible is opened and God's word is before us and there is an experience of refreshment and renewal that we temporarily forgot about.

I try to read something daily - even if it is something short. I think now that my eyes are improved, I'll get back to better reading habits but when we drift from reading and praying intensely and often, gradually our perspective and our vision change. Subtle as it may be at first, the signs are there and it is a situation that is easy to remedy.

Remember my suggestion in "Tried and True Devotional Methods" id reading the Proverb and Psalm for the date on the calendar. If you skip a few one month, you can pick them up the next month.

I have recovered my sight - now I pray that I will recover my spiritual vision in a new way.

Go Not In the Way of Evil Men

As I continue to read in the book of Proverbs, I se that it is really essential not only to pursue wisdom, but in verse 14 it specifically tells us "Enter not into the path of the wicked and go not in the way of evil men. So many worldly examples come our way on TV, advertising and radio and newspapers and magazines. I don't know about you, but I like to keep up with what is going on in the world to some extent. It inspires me to pray for our leaders when I read about Politics, and I just like to feel connected somehow. But we must be warned that whether we realize it or not, we are influenced by what we see. The way people make light of sin and wrongdoing. I can't believe this show "House" about a poorly groomed doctor who drinks alcohol, pops pills but he can do whatever he wants because he has a stroke of genius. Would you want someone like this to be your physician? I don't know if this is supposed to be a spoof or real but it offends me anyway.

When we watch the news, we hear of nothing but sinful behavior of men. We see the politicians bickering like unruly children. We say "All's fair in love and war>" I guess it has come down to "All's fair in Politics."

How do we know when we are really on the right path? When our minds aren't consciously and unconsciously affected by the world and its ways? Verse 18 tells us that"The path of the just is as the shining light that shineth more and more unto the perfect day."

The Proverb further addvises in Verse 23"Keep thy heart with all dillignce: for out of it are the issues of life." I know I pray to Jesus every day to guard my heart and my mind. If I would just steer clear of some of the unnecessary negative input of the media and stop reading everything in the newspaper, I know that I would be in better shape.

In Psalm 1 which I read the first day of the month it says simply "Blessed is the man who walketh not in the council of the ungodly or standeth in the way of sinners or sitteth in the seat of the scornful, but his delight is in the law of the Lord and in his law doth he meditate day and night."

So the answer is, to meditate on the Word of God. Think about steering clear of the path of the evil man in thought, word and deed. Of course, we all try to do this, but it is really easier said than done somethimes. Thank God that he wants to give us wisdom, and show us to pursue peace.

My prayer for myself and for you is that your heart, mind and actions will give light unto a dark world.

Get Wisdom and Understanding

So often it is easy to become bogged down with the details of problems, situations and stresses to the point of forgetting that to have wisdom and understanding should be the underlying goal of all that we do.

In reading Proverbs 3:13States "Happy is the man that findeth wisdom, and the man that getteth understanding. For the merchandise of it is better than the merchandise of silver, and the gain thereof than fine gold. She is more precious than rubies and all the things thou canst desire are not to be compared to her." Sometimes we are looking for practical solutions to problems when wisdom and understanding is what is really needed.

In Vers16 and 17, Proverbs 3 continues with "Length of days is in her right hand and in her left hand riches and honor. Her ways are ways of pleasantness and peace"

If you are like I am, you may at times be fretting over certain things in your life, hardly thinking thoughts of pleasantness or peace. It is then that one must pray and ask the Lord to change our thinking. Suddenly, instead of worry or negativity, thoughts shift to the wonder of God and all of his blessings and the manner of thinking changes. A realization that God is in control also gives me more faith in the outcome of situations that are bothersome or troublesome, or even that seem impossible.

It is true that for once to seek the pleasantness and peace that only wisdom and understanding can bring can shed new light on old situations. For God not only works through our circumstances, but works in us and through us.

Charles Stanley, in a recent sermon reminded us that God allows trials in our life to make us more like Christ. So, wisdom must be to let go and let God do a work in us when we are having difficulty working things out or are impatient waiting for things to work out.

Romans 6::::@8 8s one of God's great promises at times like these: Remember: "All things work together for good for those who love GOd and are called according to his purpose."

I write about this because I am in the process of letting God clear up my faulty thinking about the goings on in my life and the key verse in Proverbs 3 is the most help in all this:
:Trust in the Lord with all your heart; Lean not on your own understanding. In all your ways acknowledge him and He shal direct thy path."

When struggling with an overactive mind, peace truly comes when meditating on this verse. Pleasantness and Peace, Wisdom and Understanding. May this be God's gift to you also.
